Tuna (Katsuwonus pelamis)

Skipjack tuna, or Belly Grated tuna or simply Tuna (Katsuwonus pelamis) is another member of the great tuna family. It is a small species with respect to the other tunas, because the maximum can measure 80 cm and weight usually ranges between 2 and 4 kg. It is characterised, hence its name, by presence of lists or stripes on his belly. It is the most fished species in the world, present in all oceans. 80% of world catches is destined for canning. Its flesh is reddish pink, juicier than yellowfin tuna meat, less compact and with a more intense flavor, due to increased presence of fat in its meat.
