White Tuna

White Tuna (Thunnus Alalunga)

Bonito del Norte or White Tuna (Thunnus alalunga) is characterized by large pectoral fins (hence the scientific name "alalunga"), a deep blue coloured back of the body, almost black, and white belly. Fish used for CONDOR productions do not exceed 12 to 15 kilos.

Fishing for this delicacy of the sea takes place during the so called "costera del Bonito", a period of the year which runs from June to October, during which the fishing fleet is operating in the Bay of Biscay in search of this precious species. In this time of year, fish have the properties suitable for capture and the subsequent production of a remarkable preserved seafood.

Regarding the other species of tuna, White Tuna has a more white meat and less fat. Being a blue fish, is rich in high-quality protein and a rich source of omega-3 fatty acids, minerals and vitamins.

The CONDOR White Tuna in the flesh has a firm texture, mild flavor and delicate.
